Ah, summer. During the grey, barren bleakness of winter, everyone longs for those seemingly endless sweltering, hazy summer afternoons when mowing the lawn, weeding the garden, policing the kids as they push each other into the pool or invent ingenious and slightly dangerous ways to plunge across the yard on the slip and slide, and simply walking outside makes you want to take up residence inside the freezer. Whether you’re dreaming of warm weather or endeavoring to endure it, these vivaciously scarlet, vitamin C- and collagen-spiked popsicles will evoke the carefree, slower days of summer. 

Strawberry Orange Collagen Popsicles

Time: 5 hours, 10 minutes 

Servings: 6

Strawberry Orange Collagen Popsicles Recipe

Ingredients

  • ½ cup fresh strawberry juice (2 cups of strawberries)
  • ½ cup freshly squeezed orange juice (2 medium-sized navel oranges)
  • 3 large organic fresh strawberries, cut in half, stems removed 
  • 1 scoop of Primal Kitchen Collagen Peptides

Equipment:

  • Vitamix blender
  • Popsicle mold*
  • Wooden popsicle sticks if your mold doesn’t include sticks

*We used these stainless steel popsicle molds. 

Instructions

  • Wash strawberries and remove the green stems. Peel oranges, removing as much of the white pith as you can.

  • Place fruit into the Vitamix. Blend on high speed until fruit becomes a frothy liquid. 
  • If you prefer smooth, less textured popsicles, strain the fruit juice through a fine mesh sieve. The navel oranges should be seedless, but strain the juice if you do happen to see a seed.

  • Pour juice into a pitcher or glass measuring cup with a spout. Using a fork, whisk in 1 scoop of collagen peptides until completely dissolved. 
  • Place 1–2 strawberry slices (depending on how large the strawberry slices are) into each popsicle mold.

Strawberry Orange Collagen Popsicles Recipe

  • Pour juice into each mold, leaving about one-quarter inch of room at the top (the popsicles will expand some as they freeze). 
  • Place tops of the popsicle molds onto the frame and slide into the freezer for about 5 hours, or until frozen solid. 
  • If using a mold that does not come with sticks, place popsicle mold into the freezer for 2 hours. Remove from freezer and insert sticks into the middle of each pop. Place back in the freezer for another 3 hours, or until completely frozen.
  • Once frozen, unmold popsicles from the mold and enjoy.
  • To store, wrap each popsicle in plastic wrap, place each pop into a resealable bag, or store in a freezer-safe airtight container with a piece of wax or parchment paper separating each pop.
  • Popsicles can be stored for three to four weeks in the freezer before they start to lose their flavor and texture.
