Sloppy Joe-Stuffed Sweet Potatoes with BBQ Ranch Dressing

This comforting, substantial recipe makes a fantastic post-workout meal when you’re ravenous, and need something satisfying. It’s also a great kids meal: ideal for sleepovers, a once-in-a-while dinner in front of the television, or even a summertime meal around the campfire—precook the sweet potatoes at home and wrap them in foil, warm the sloppy joe sauce in a pot on a hibachi or other portable grill, and assemble in front of the fire.
Remember when a plain baked potato paired with a diet soda was considered “diet” food? LOL. Our souped-up spud provides a far more gratifying meal for active adults and kids. It’s as craveable as the cheesy, bacon-topped tater skins you can find at pub happy hours and chain restaurants, but, arguably, much more delicious. It’s layer upon layer upon layer of flavor.
Sloppy Joe-Stuffed Sweet Potatoes with BBQ Ranch
Time: about 1 hour, 40 minutes
Servings: 4
Ingredients
- 4 sweet potatoes
- 2 tablespoons Primal Kitchen Avocado Oil
- ⅔ onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, finely diced
- 1 red bell pepper, finely diced
- 1 ½ pounds extra lean ground beef
- ¾ cup Primal Kitchen Unsweetened Ketchup
- ¼ cup Primal Kitchen BBQ Sauce
- 1 dash Worcestershire sauce
- 1 teaspoon Primal Kitchen Spicy Brown Mustard
- 1 teaspoon salt, or to taste
- ¼ teaspoon ground black pepper
- 1 cup chicken bone/broth or water
- 4 teaspoons Kite Hill ricotta cheese
- Handful of fresh cilantro leaves
- ¼ cup Primal Kitchen BBQ Ranch Dressing
- Half of an avocado, sliced, optional
Instructions
To make the sweet potatoes:
- Preheat oven to 400ºF.
- Pierce each potato a few times with a fork.
- Place sweet potatoes on a rimmed baking sheet lined with foil or parchment paper.
- Bake until tender, about 45 minutes.
- Remove from oven and allow to cool for 5–10 minutes.
- Cut a slit down the middle of each potato, taking care not to cut all the way in half. Gently pull the sides apart to create a bed for the rest of the ingredients.

To assemble:
- Top each cooked sweet potato with two generous ladles of sloppy joe sauce.
- To each sweet potato, add: one teaspoon of ricotta cheese, a few fresh cilantro leaves, and a generous drizzle of Primal Kitchen BBQ Ranch Dressing.
- Add a slice or two of avocado to each sweet potato, if desired.
