Poached Egg & Turmeric Breakfast Salad

Ingredients
- 1/2 avocado
- 2-3 large kale stalks
- 2 fresh farm eggs
- 2-3 strips of bacon
- Primal Kitchen Lemon Turmeric Vinaigrette
- Primal Kitchen Avocado Oil
- Salt and pepper (to taste)
Instructions
- Fry the bacon in Primal Kitchen Avocado Oil.
- Allow the bacon to cool, and crisp slightly. Cut into small pieces.
- Poach the eggs. Top with a good pinch of salt and pepper.
- Slice the avocado.
- Cut the kale into bite sized pieces, and massage with Primal Kitchen Lemon Turmeric Vinaigrette.
- Fill a serving bowl with the kale. Next add the eggs, bacon bits, and avocado. Drizzle with a little extra Lemon Turmeric Vinaigrette and add a sprinkle of pepper.
