The convenient lure of Chinese takeout after a busy, stressful day is all too real. On your way home from work, you feel fried, over-stimulated and can barely muster the energy to tap out a delivery order. Triple all of these feels if you just picked up cranky kids from daycare, too. We’ve all been there.
Trust us when we tell you that you can prepare a wholesome, real-food dinner that tastes just as good as takeout (actually, that tastes way better)—sans the inevitable after dinner brick-in-the-gut feeling or run-to-the-bathroom urgency from the use of dubious additives and suspect industrial seed oils in the takeout. Nobody needs that after the day you’ve had.
In just 20 minutes, you can have dinner on the table. All it takes is browning some meat, adding some veggies and sauces to the mix, then layering on even more flavor with some chopped nuts, toasted sesame seeds and fresh lime juice. One-pot dinner for the win!
Egg Roll Bowl
Time: 20 minutes
Servings: 4 servings
Ingredients
- 1 teaspoon Primal Kitchen Avocado Oil
- 1 lb. ground pork
- 1 bag tri-colored coleslaw mix
- ¼ cup Primal Kitchen No Soy Teriyaki
- 1 teaspoon Coconut Aminos
- 2 green onions, sliced
- ¼ cup macadamia nuts, chopped (optional)
- 2 tablespoons sesame seeds, toasted
- 2 tablespoons cilantro leaves, torn
- 1 small lime, juiced
Instructions
- In a large skillet over medium-high heat, add Primal Kitchen Avocado Oil.
- Add ground pork and cook until brown, stirring frequently and breaking up the meat into small bits, about 4–5 minutes.
- After pork is cooked through, drain any excess cooking liquid from the pan. Return pork to the drained pan and place skillet back on stove.
- Add coleslaw mix and stir well.
- Cook for 2–3 minutes, or until just wilted, stirring frequently.
- Stir in Primal Kitchen No Soy Teriyaki and coconut aminos.
- Add green onions, then remove from heat.
- Top mixture with nuts and sesame seeds.
- Add fresh lime juice, and enjoy.
