CHIPOTLE LIME CHICKEN SALAD
Enjoy this smoky and tangy Chipotle Lime Chicken Salad featuring Primal Kitchen® Chipotle Lime Mayo!
INGREDIENTS
- 2 boneless chicken breasts
- 1/2 cup Primal Kitchen® Chipotle Lime Mayo
- 1 tablespoon greek yogurt
- 1/2 lime, juiced
- 1/4 teaspoon chipotle pepper seasoning
- 1/2 cup chopped celery
- Salt and pepper
INSTRUCTIONS
- Place the chicken breasts on a baking sheet. Sprinkle with salt and pepper, and bake at 350 degrees for 45-50 minutes.
- Once the chicken is out of the oven, chop the meat into cubes and set aside to cool.
- Add the chicken, Primal Kitchen® Chipotle Lime Mayo, yogurt, chipotle seasoning, lime, celery, and a sprinkle of salt into a mixing bowl. Toss well.
- Serve over a bed of organic lettuce.
